

RICOTTA IN PEACE (RIP)
Ingredients
1 loaf CHABASO roasted garlic ciabatta 14oz
2 cups whole milk ricotta
1 cup grated parmesan
2 tablespoons extra virgin olive oil
1 large egg, room temperature
Zest of 1 lemon
1 teaspoon chopped fresh thyme
½ teaspoon chopped fresh parsley
1-2 pinches red pepper flakes
Instructions
Preheat the oven to 375 degrees Fahrenheit and spray a small baking dish or skillet with pan spray.
Stir 2 cups whole milk ricotta, 1 cup grated parmesan, 2 tablespoons extra virgin olive oil, 1 large egg, zest of 1 lemon, 1 teaspoon chopped fresh thyme, ½ teaspoon chopped fresh parsley, and 1–2 pinches red pepper flakes together in a large bowl until fully combined.
Transfer to the prepared baking dish and bake for 15–20 minutes, until the top is lightly browned. For more color, you can broil the dip on high for about 1 minute.
Slice and toast Chabaso Roasted Garlic Ciabatta to make crostinis for dipping.
Optional décor: Top the dip with extra toasted crostini “grave stones” for a spooky Halloween touch.

BOO-SCHETTA
INGREDIENTS
CHABASO Roasted Garlic Ciabatta 14oz
Large Ripe Tomato
Thin Sliced Fresh Mozzarella
Balsamic Reduction
Olive Oil
Red Wine Vinegar
Basil
Salt & Pepper
Garlic
INSTRUCTIONS
Slice the roasted garlic ciabatta into ½-inch thick slices. Brush lightly with olive oil and toast until golden.
In a bowl, combine diced tomato, minced garlic, olive oil, red wine vinegar, salt, and pepper. Mix well and let sit for 10 minutes.
Spoon tomato mixture onto each toasted slice.
Drizzle a small amount of balsamic reduction over the tomato mixture.
Using a small cookie cutter or paring knife, cut mozzarella slices into ghost shapes. Place one mozzarella ghost on top of the tomato mixture.
Dot each mozzarella ghost with 2 drops of balsamic reduction to create “eyes.”
Serve immediately.

Mummy Ciabatta Bread Pizza
Ingredients
1 loaf Chabaso Roasted Garlic Ciabatta, sliced in half lengthwise
2–3 tbsp butter, melted
1 tsp Italian herbs (basil, oregano, thyme)
1 cup red pizza sauce
6–8 sticks mozzarella string cheese, pulled into thin strips
Black olives, sliced (for eyes)
Instructions
Prep the Bread - Preheat oven to 375°F (190°C). Slice the Chabaso Roasted Garlic Ciabatta loaf in half lengthwise, then cut each half into desired serving sizes. Place on a baking sheet, cut side up.
Garlic Butter Base - Mix melted butter with Italian herbs (and garlic powder if using). Brush over the cut sides of the ciabatta.
Add Sauce - Spread a generous layer of red pizza sauce over each piece.
Create the Mummy Wrapping - Arrange mozzarella string cheese strips crisscross over the sauce to look like mummy bandages, leaving gaps for the eyes.
Add Eyes - Place two black olive slices in each gap to make the eyes.
Bake - Bake for 8–10 minutes, or until cheese is melted and bread is lightly toasted.
Tablespoons Serve - Enjoy warm as a fun and spooky Halloween appetizer or lunch!
