  • 2 cups whole milk ricotta
  • 1 cup grated parmesan
  • 2 tablespoons extra virgin olive oil
  • 1 large egg, room temperature
  • Zest of 1 lemon
  • 1 teaspoon chopped fresh thyme
  • ½ teaspoon chopped fresh parsley
  • 1-2 pinches red pepper flakes

  1. Preheat the oven to 375 degrees Fahrenheit and spray a small baking dish or skillet with pan spray.
  2. Stir 2 cups whole milk ricotta, 1 cup grated parmesan, 2 tablespoons extra virgin olive oil, 1 large egg, zest of 1 lemon, 1 teaspoon chopped fresh thyme, ½ teaspoon chopped fresh parsley, and 1–2 pinches red pepper flakes together in a large bowl until fully combined.
  3. Transfer to the prepared baking dish and bake for 15–20 minutes, until the top is lightly browned. For more color, you can broil the dip on high for about 1 minute.
  4. Slice and toast Chabaso Roasted Garlic Ciabatta to make crostinis for dipping.

  • 10 thinly sliced fresh mozzarella pieces
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Fresh basil, chopped
  • Salt & pepper, to taste
  • Balsamic reduction (for drizzling + ghost eyes)

  4. Spoon tomato mixture onto each toasted slice.
  5. Drizzle a small amount of balsamic reduction over the tomato mixture.
  6. Using a small cookie cutter or paring knife, cut mozzarella slices into ghost shapes. Place one mozzarella ghost on top of the tomato mixture.
  7. Dot each mozzarella ghost with 2 drops of balsamic reduction to create “eyes.”

  • Black olives, sliced (for eyes)
