Olive, Bacon & Snap Pea Grilled Pizza Stix™

 

Ingredients

2 Chabaso Olive Oil Stix™ sliced length wise
2 whole garlic heads, with most of papery outer layer removed
2 cups olive oil
4 oz cooked thick sliced bacon
1 cup sugar snap peas, stems removed
8 oz sliced fresh mozzarella cheese
4 oz calamata olives, pitted
2 oz shaved Pecorino Romano cheese (or Parmagiano Reggiano cheese)

Directions

On the second shelf of the grill, place the garlic and 2 cups of olive oil in a cast iron skillet, and simmer for 35 minutes.  When the garlic is golden and tender remove from the oil; and allow to cool.   Then squeeze out the soft cloves into a small dish, and save the garlic oil. Sprinkle cloves with salt & pepper, 3 tbsp of the garlic oil, and mix with a fork.   Brush the Stix™ with some of the garlic oil and grill face down.    Remove the Stix™ from the grill and spread with the roasted garlic mix on the inside faces.  Then top with thick sliced bacon, fresh sugar snap peas, pitted calamata olives, and sliced fresh mozzarella cheese.  Turn off half the grill, and slide the pizzas onto the off side and close the top.  Leave covered for about 10 minutes or until the cheese is melted and crispy. Then sprinkle with Pecorino Romano and enjoy!!
